invasive 'de-alcoholising' process
we use a gentle technique of secondary fermentation
to convert alcohol into acetic acid
- similar to what happens
when wine ages
over time
we then rebalance this
with grape must and an infusion
of selected botanicals to recreate wine's
structure, intensity
& bouquet
a period of ageing in oak then imparts
a layered complexity normally
expected from a
fine wine
