non-alcoholic | structured

"the structure of a wine is its hardware,
the physical structure that gives it shape
or outline, much like the
brickwork or walls
of a house"
– Mary Gorman-McAdams (Master of Wine)

instead of an
invasive 'de-alcoholising' process
we use a gentle technique of secondary fermentation
to convert alcohol into acetic acid
- similar to what happens
when wine ages
over time
we then rebalance this
with grape must and an infusion
of selected botanicals to recreate wine's
structure, intensity
& bouquet
a period of ageing in oak then imparts
a layered complexity normally
expected from a
fine wine

"Drinking a very old wine
can be a soulful experience... but it is
also a vector to mystical
experience."
– Terry Theise (wine writer)

inspired
by Sufi poetry
and driven by its perception
of wine as the ultimate metaphor for
the ethereal and the
transcendental
